Bloglovin...and the re-launch of Easy Peasy Recipe Swap!!

I'm feeling pretty clever right now. I just added a "Bloglovin" button to my page, and THE HUSBAND wasn't even at home. Yes. You heard me! If you are a blogger you probably already know that in order to follow blogs, you will soon need to do this with Bloglovin. So here is my invitation to you to join along the fun with Bloglovin..and if you're someone who just likes to pop over every now and then then this won't affect you...so don't get worried, Mum!

Anyway, it's been ages since I shared a recipe here, so I thought I'd do just that today. Last year I put the call out for easy recipe's to share, and we started an online Eeasy Peasy Recipe Swap amongst my friends and readers. It was a lot of fun, and rather simple. Lovely people would send me an easy recipe (either via email, or a link to their own blog page) and then I would just use my blog to share the recipes with other readers. It was a bit of fun, and a great way to swap and gather ideas for EASY cooking, and discover a few new blogs.

So I thought I'd launch it off again with my mini frittata's I made the other day. A great way to use up leftovers, and perfect for school/work lunches, picnics and parties (if there are no egg allergies of course!)

Easy Peasy Recipe #8

MINI FRITTATAS in 5 very easy steps...
 
1. All you want is about a cup of grated cheese and whatever left over cooked vegetables (or meat!?)you may have. We had a baked potato left over from dinner, some roasted pumpkin and a few semi dried tomatoes. I mixed all of this together...
 
2.In a separate bowl I placed 3 eggs, and a large dash of milk. I whisked this together, and added some salt and pepper.

3.The veggie and cheese mixture was placed in mini muffin tin (1/2 filled)

4. The egg mix was then poured on top.

5. And then they baked in a 180 degrees oven for about 20 minutes, until golden brown.

Easy Peasy Recipe Swap-Recipe #7



This "recipe" was passed on to me from my friend. It's so not cooking, I'm reluctant to even include it here as a recipe, but its fun, yummy, Christmassy, involved some food "upcycling" (which seems to be a hip word at the moment, so I just enjoyed using it then) and mostly, it is Seriously. Easy. Peasy.

How to make some.....

MINI CHRISTMAS PUDDINGS

Take one Ye olde Christmas cake (a bought one or made one or gifted one...)

Crumble it all up.



Add a few spoonfuls of jam (any flavour, I used raspberry) to the crumbled cake and mix so that it becomes a thick, slightly wet, cakey mess.


Roll up into little balls and let them set in the fridge for a while.

 
Drip some melted white chocolate and then place a little red and green lolly on top. (I just used some finely cut jelly babies.)



Very Yum! Fun one for the kiddies (or crappy cooks like me!) to get involved with!!

Easy Peasy Recipe Swap-Recipe #6

My awesome friend Mel (who I've known since the first year of High School!) has sent in her easy peasy recipe for chicken nuggets. She made them years ago for Coleman Jnr, and I made her give me the recipe because they were so good. They've now become a regular for kids parties in our family..so easy and yummy!

Here it is (From the lovely and newly engaged Mel...)

EASY CHICKEN NUGGETS

Ingredients
chicken breast
mayonaise
breadcrumbs
butter
 
preheat oven to 180 degrees
cut chicken into small nugget sized pieces
coat chicken pieces in mayo
coat mayo chicken in breadcrumbs
put on oven tray and drizzle with some melted butter (not very much)
bake for 15-20mins
 
yum!

Easy Peasy Recipe Swap- Recipe #4

This easy peasy recipe for her not so secret choc-chip cookie has been sent by the lovely Ash. Ash is not only my best mate, but married my brother years ago, so is also my sister in law! She writes a lovely blog about healthy eating, excercise, cooking, craft, motherhood... called Go Mumma. Not growing up with sisters, I feel so blessed as an adult, belonging to a big sisterhood of sister in laws...love to them all if their reading!!!!
Ingredients:
125g butter softened
1/2 cup caster sugar
1/2 cup brown sugar
1/2 tsp vanilla essence
1 egg
1 3/4 cups self raising flour
1/2 tsp salt
125g choc chips (I use milk, dark and white together)
60g chopped walnuts (optional but nice)

Method:
Pre-heat oven to 180 deg C. 
Cream together butter and sugars, add vanilla and lightly beaten egg. Mix in SR flour and salt until a soft dough forms. Stir in choc chips and walnuts. 

Roll into balls (teaspoonfuls) and place on a greased and lined biscuit tray making sure to leave space for spreading. 

Bake in moderte oven for 10-12 mins or until lightly golden. Allow to cool on the tray for approx 5 mins before transferring to wire racks. Makes approx 40 small biscuits.

Let's do an "Easy Peasy" Recipe Swap- Recipe #1

I love easy recipes. I'm not the world’s best cook, so throwing a few things together and coming up with the goods is always nice.

I thought we could do a bit of recipe sharing in the lead up to the silly season. It’s always nice to have a few quick tricks up our sleeves when things get manic. If you have a really yummy and super simple recipe that you want to share, you can email it (you can even include a pic if your very clever) to mezzcoleman@hotmail.com or if you post it on your blog let me know via a comment and I'll share with my readers.

Here's mine. It's Yummy, creamy and EASY potato salad.


POTATO SALAD RECIPE

Chop and boil as many potatoes as you want. Keep the skin on!!
Once slightly cooled, add as much mayo as you like, and then add:
Some chopped parsley
A diced red onion
Salt and pepper.


It can be eaten warm or cold, and its delicious! Perfect to bring to BBQ’s.
